Yuck, another evening of overeating and feeling terrible. I don’t know why I did it to myself and I believe I’m fine as long as I don’t eat too much sugar. I makes me shaky and keeps me up at night. Not a great start to the summer break.
I had promised Bella to make cookies today and I did but we made raw lemon cookies with agave nectar so I won’t have another sugar roller coaster. I absolutely love anything with lemon: cookies, loafs, bars and of course lemonade. These cookies are so delightful with a cup of ice tea on a nice summer day like we’re having here in San Diego.

1 cup almond meal
3/4 cup shredded and dried coconut
Juice from one small lemon
1 tbs maple syrup (more if “dough” seems dry)
1/2 vanilla bean, split open and seeds scraped out and used
Combine everything in a food processor and blend until it’s a dough call. With wet hands, roll dough to small balls. Flatten slightly and dehydrate in F105 until dry on outside and chewy on inside.
