I love using kale to make pesto. Kale tastes great with lemon, salt, garlic and oil; and it adds nutritional value. My pesto also includes pumpkin seeds since our son Liam’s homegrown pumpkins have naked seeds. Pumpkin seeds provide nutrition like magnesium, protein and iron, as well as omega-3, omega-6 and fiber. Here is how to make vegan kale pesto.
Ingredients:
½ cup raw pumpkin seeds
2 cups kale, torn into smaller pieces
1 garlic clove
Juice from ½ lemon
¼ -1/2 tsp salt (or more if needed)
2 Tbsp nutritional yeast
½ cup olive oil
Directions:
Roast seeds in 350° F preheated oven until slightly golden. It takes about 5 minutes.
Using a food processor, pulse kale and garlic until finely chopped. Add pumpkin seeds, salt, nutritional yeast and lemon juice, then blend until smooth. With food processor still running, add the oil. Done!!

Enrich your soil
Naturally, you can just let the leaves decompose on the ground or add them to your vegetable beds. Leaves will enrich the soil your trees and providing a habitat for a range of wildlife.
Enhance your garden
My favorite way to use fall leaves is to add them to my raised garden beds. I always smile when I hear how much money people spend on mulch when it’s usually free somewhere in your neighborhood. We use grass clippings, weeds and leaves, and old plants as mulch.
Building up the layers in a no-dig raised bed is a great way to create rich soil, so you’ll have a thriving soil ecosystem in the spring.
Build a compost pile
Fall is an excellent time to build a compost pile, which can be as simple as staking up a hoop of three-foot-high chicken wire. Then, just add leaves to your composting systems along with other biodegradable materials.
Pro tip: After Halloween and Thanksgiving, look for leftover bales of straw on sale–or even left out for garbage collection. Straw makes for excellent mulch and can be added to the compost pile along with your leaves.
Use leaves as mulch
Fall leaves make excellent mulch, and as a bonus, they’re free!
Leaf mulch tends to break down and blend into the soil quickly–adding lots of nutrients–and it blocks weeds from forming. Using leaves as mulch also entices earthworms to your garden soil.
Create fall-themed decorations
I use fall leaves for zero-waste decorations, both indoors and outdoors.
Along with mini pumpkins, fall leaves make beautiful decorations for holiday parties, dinners, or an attractive fall-themed front door decoration.
Pile & play
Fun for kids (big and small); simply rake your leaves into piles and jump right in!

To pack a zero waste lunch for the kids; Invest in a reusable bento box or thermal soup containers as well as a reusable metal bottle, reusable cutlery, and cloth napkins. If you have to wrap food, use either a cloth sandwich bag or beeswax wrap to ensure avoiding unwanted waste. Buy snacks from the bulk section or make your own crackers, cookies and energy bars.

Embracing reusable folders, notebooks made from recycled paper, refillable pens, and eco-friendly pencil cases is a fantastic way to support sustainability while gearing up for the school year. Let’s inspire our kids to minimize waste and appreciate the planet as they embark on their educational journey!
Here are some of my tips: 🌍📓
Backpacks—Get a good quality backpack that will last so you don’t have to buy a new one every school year. Also, buy one that comes with a warranty like Jansport backpacks, which have a lifetime warranty, so if it breaks or falls apart the company will fix it. My kids all have kånken backpacks from fjallraven.com.
Binders—Cardboard with a center with screws, which are 100% recyclable binders
Folders—Buy paper or cardboard but avoid the plastic kind so that, when they break, you can recycle the paper.
Pens and pencils—Fountain pen is refillable. For highlighter, I like Eco highlighters that are both biodegradable and eco-friendly and made from sustainable wood. When you’re finished with these highlighters, you can throw the stumps into the compost.
Ruler—Buy a durable stainless steel ruler or a wood ruler, not plastic.
Calculator—This is best to buy used on eBay or Craig’s list.
Print paper—Buy only 100% recycled paper or FSC certified paper, and make sure it’s not bleached.
Notebooks—Buy a durable notebook made with 100% post-consumer recycled paper.
Books—Try to borrow, buy used, or download books before buying new ones.
Make sure to recycle all used papers from printers and notebooks as well as covers from binders and folders.

ELDERBERRY SYRUP RECIPE
Makes about 6-8 small bottles of elderberry syrup
Ingredients:
1/2 – 3/4 cup organic dried elderberries or 1 cup fresh, ripe elderberries
3 cups filtered water
3/4 – 1 cup maple syrup
Instructions:
Place elderberries and filtered water in a medium saucepan. Bring to a boil, reduce heat, and simmer on medium-low for 45 minutes. Mash the elderberries to release any remaining juice. Using cheesecloth, strain the mixture into a glass bowl. When the liquid has come to room temperature, gently stir in the raw honey and mix thoroughly.
Store in labeled 8- or 12-ounce amber glass bottles.
This mixture will last many months in a cool, dark pantry or in the refrigerator.
