What To Do With Leftover Rice
A friend of mine who comes from a Vietnamese family once told me that you should never throw away leftover rice. I couldn’t agree more! Leftover rice has so much delicious potential.
Here are our favorite ways to use up leftover rice:
Use as a filler— We love using leftover rice when making lentil or bean patties, neatballs, or neatlofts. The starch in the rice helps bind the beans or lentils so you can form them into balls, patties, or loaves. The rice also acts as a binder and holds the patties together while they’re cooking.
Fried rice— Our family absolutely loves fried rice. I like making it because it’s relatively fast and easy, and you can pack in loads of vegetables and protein like tofu, beans, or lentils. My absolute favorite is Kimchi Fried Rice.

Fried risotto balls— What’s not to love? You get a mouthful of warm, crunchy, creamy deliciousness in each bite!
Rice and Chickpea Soup— We often ladle our soups on top of leftover rice, but this soup stars beans and rice as the main ingredients.
Rice Salad— Rice salad is the perfect picnic food, and the best part is the rice can be either warm or cold.
Indian Biryani— I absolutely love biryani; its salty and spicy flavors are scrumptiously satisfying.
