I love all kinds of stone fruits and this season we got lots of peaches, plums and nectarines so we preserving a lot of it and also making this yummy plum cake that is both vegan and gluten-free. This cake screams summer for me and pairs well with some whipped cream or vanilla ice cream.

1 ½ cup Gluten-free flour
1 cup coconut sugar
3 tsp baking powder
½ tsp vanilla extract
2 tsp ground cardamom seeds
50g butter, melted
1 ¼ cup almond milk
3 plums
½ cup grated almond paste
2 Tbsp. Maple syrup

Preheat oven to F350. Slice plums. Grease a pie dish with some butter or coconut oil. Mix flour, coconut sugar, cardamom in a mixing bowl. Mix together vanilla extract, melted butter and milk and add slowly to flour mix and mix well. Pour batter in greased pie dish. Arrange plum slices over batter. Sprinkle almond paste all over batter. Bake for about 30-35 minutes, until cake is dry. Remove from oven and brush maple syrup over plums.
