Who does not love creamy mac and cheese? I love it but like mine to be a bit healthier. A good vegan mac and cheese is all about the cheese sauce and this cheese sauce not only is actually good for you and only contains good fats but it tastes amazing and also works as a dip or as a nacho sauce by adding some jalapeno pepper.
- 1 cup chopped carrots
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ cup nutritional yeast
- ½ tsp salt, maybe more if you want a saltier.
- 1/3 cup raw cashews
- 1 cup Almond milk
Cook carrots until soft in water and drain. Mix everything until completely smooth and creamy in a food processor or high-speed blender.
