A Sample Menu of What We Eat

I get lots of questions about what my family, especially what my kids eat each week. So here is a sample menu. During the week, I eat lunch with my two boys, and James and Bella eat at work/school. We try to eat lots of fruits and vegetables, and we let the kids eat pretty much all the fruit and vegetables they wish.what we eat lentil stew

Breakfast: Oatmeal cooked with raisins, figs and blueberries, and served with a little coconut oil, flax seed meal, and almond milk and chia gel. On weekends we treat ourselves to pancakes:)

Snack: Green smoothie and a sandwich or nuts or acai bowl

Lunch: Lentil soup or bean patties, mashed potato, served with bread and hummus, and mixed salad with spinach, tomatoes, cucumber and sprouts, and almond milk

Snack: Yogurt served with fruit, quinoa muesli and hemp seeds

Dinner: Pasta with mushroom sauce or lasagna, both served with fresh and raw cut up veggies — peppers, lettuce, cucumber, grated carrots and sprouts

I always serve lunch and dinner with a plate of raw vegetables that they can pick and choose from. Throughout the day we eat lots of fruit, and I usually bring fruit with me in the car or when we’re out and about. For treats, we like popcorn (made the old fashioned way in a pot) and home baked goodies; and the kids really like chia puddings and raw ice cream made with raspberries, dates and avocado.

To help me stay on track and to cook everything from scratch, I write a menu each week and stick to it. This way, I can do all the shopping once a week. And I plan ahead each day so I know my kids get what they need. I found this way to work the best. It saves us money and time.
