Mexican Quinoa Stuffed Peppers

My dear friend Corri made these for me a couple of years ago and at that time I did not think I would like stuffed peppers but glad to say I was wrong. The nutty flavor of quinoa goes great with the sweet pepper.

 

 

 

 

 

 

 

  • 6 Whole sweet peppers (green, yellow, orange or red)
  • 1 1/4 cups cooked quinoa
  • 1 cup black beans (cooked or canned)
  • 1 cup salsa (I used medium spice)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 2 tsp garlic powder
  • 1 cup grated mozzarella like vegan cheese
  • Salt and pepper to taste

Serve with:

  • Fresh minced
  • Avocado slices or guacamole

Preheat oven to F400/C200

Cut peppers in half and remove seeds and white membranes

In a bowl, mix quinoa, beans, salsa, spices and cheese

Stuff filling into peppers

Place peppers in an oven dish and bake in oven for 20 minutes

Serve peppers with cilantro and avocado on top along with a side salad for a nice hardy meal.
