Meatless Monday — Arrabbiata Sauce

What I love most about vegetarian food is how colorful and flavorful it is. And if I could eat any specific cuisine for the rest of my life, it would for sure be Italian. I just love pasta with really amazing flavorful sauces, and Arrabbiata is one of my favorites. It is a spicy tomato sauce that is pretty fast to cook, so it’s perfect when you’re in a hurry. Or even better, make up a large pot of this sauce and freeze some for those emergencies when you need food fast.

  • 1/2 red pepper, seeds removed and dicedArrabbiata sauce
  • 1 Tbsp. olive oil
  • Zest from 1 lemon
  • 1 can fire roasted diced tomatoes
  • 1 Tbsp. balsamic vinegar
  • 2 tsp. dried Italian herbs
  • 1 Tbsp. honey
  • Salt to taste
  • Fresh black pepper to taste
  • 1 tsp. chili pepper
  • Grated cheese to sprinkle over (optional)

Heat oil on medium heat. Sauté garlic and pepper for 3 minutes. Add lemon zest, tomatoes, vinegar, honey and herbs, and simmer sauce for 10 minutes. Add salt, pepper and chili pepper, then stir. Serve over fresh pasta and vegetables. Sprinkle cheese over just before serving.
