Fresh herbs are among my favorite things to grow. This year, with all the rain we have had, my garden has produced lots of herbs. I love using them when cooking and baking, and will dry and freeze some of the extra. One of my favorite uses for herbs is to make my very own herb salt. It’s so easy, tastes great, and makes a great homemade present.
- .2 cups fine sea salt
- 1 apple, cored, peeled and chopped
- 1 celery stalk, chopped
- 4 cups chopped mixed fresh herbs: I used chives, basil, thyme, sage and parsley
- 3 garlic cloves, chopped
Place everything in a food processor, and blend until you have a wet mess. Spread out thinly on parchment paper, and dry either in an oven on low heat, in a dehydrator or in the sun. Stir it a couple of times to assure it dries evenly.
