Healthy Baked Spring Rolls – Crispy, Light, and Delicious!

Craving spring rolls but trying to avoid all that oil from deep frying? I was in the same boat — I love the satisfying crunch of spring rolls, but not the greasy aftermath. So I created my own healthy baked spring rolls that are just as crispy, flavorful, and perfect for dipping — without the extra fat.

Instead of deep frying, I baked these spring rolls to golden perfection. The result? A lighter, guilt-free version that still satisfies the craving. Plus, they’re packed with fresh vegetables like carrots, zucchini, and bean sprouts, making them a great way to sneak in some extra nutrients. We dipped ours in sweet chili sauce, and let me tell you — they disappeared fast! I even froze the leftovers for a quick future snack or meal.

Healthy Spring Roll Recipe (Makes 12)

Ingredients:

• 6 filo dough sheets (thawed according to package instructions)

• 2 garlic cloves, grated

• 2 carrots, grated

• 2 cups bean sprouts

• 1 large zucchini, grated

• 1 tbsp mirin

• 1 tbsp canola oil (plus more for brushing)

• Salt and chili powder to taste

🔪 Instructions:

1. Preheat oven to 450°F (230°C).

2. In a medium pan, heat 1 tbsp canola oil over medium heat. Add grated garlic and sauté for 1 minute.

3. Add grated carrots and cook for another minute. Stir in bean sprouts and zucchini, and cook for an additional minute.

4. Add mirin, salt, and chili powder to taste. Mix well and let the filling cool slightly.

5. Cut filo sheets in half lengthwise to make 12 rectangular sheets.

6. Place a spoonful of filling on one end of each sheet. Fold the edge over the filling, roll halfway, then fold in the sides. Continue rolling to seal the spring roll.

7. Place each roll seam-side down on a lightly oiled baking sheet. Brush the tops with a bit of oil.

8. Bake for about 12–15 minutes or until the spring rolls are golden brown and crispy.
