No-Buy Week 3 update
Week 3 of our no-buy is going really well, and one big reason is that we’re focusing on eating what we already have at home instead of shopping. One pantry staple we always have plenty of is lentils, they’re climate-smart, healthy, and incredibly budget-friendly.
One of my kids’ favorite meals (and a true no-buy hero) is this lentil bolognese-style pasta sauce. It’s fast, protein-packed, and perfect for busy weeknights.
This is a recipe I always keep in my back pocket. It’s flexible, forgiving, and easy to adapt based on what you already have at home—perfect for a no-buy or pantry challenge.
Ingredients:
• 1 cup red lentils, rinsed
• 2/3 cup grated carrots
• 2/3 cup water
• 1 small yellow onion, chopped
• 1 large garlic clove, grated
• 1 vegan bouillon cube
• 1 can (14 oz) crushed tomatoes with Italian herbs
• 1 tbsp brown sugar
• 1/4 cup ketchup
• 1/4 cup sour cream or dairy-free alternative
• 1 tbsp oregano
• 1 tsp chili powder
• 1 tsp smoked paprika
• Salt to taste
• Optional: grated cheese or dairy-free topping
Instructions:
1️⃣ Combine lentils, carrots, water, onion, and garlic in a pot. Bring to a boil.
2️⃣ Lower heat and simmer for about 10 minutes, until lentils are soft.
3️⃣ Add crushed tomatoes, bouillon cube, brown sugar, ketchup, sour cream, oregano, chili powder, smoked paprika, and salt.
4️⃣ Simmer for another 5 minutes, stirring well.
5️⃣ Toss with your favorite pasta and serve with veggies or a side salad.
No-buy doesn’t mean boring. It often means simpler meals, less waste, less stress, and more money saved. 💚

Lately, I’ve been thinking a lot more about the impact my clothes have on the planet.
The fashion industry is changing and sustainable fashion is finally getting the spotlight. But there’s still so much misinformation around it, so I wanted to clear a few things up.
💚 “Eco-friendly clothes are too expensive”
Not true. They may cost more than fast fashion, but they’re far from unattainable. You’re paying for quality, fair production, and pieces that actually last.
💚 “Ethical fashion isn’t stylish”
I used to think this too, until I saw how far sustainable fashion has come. These pieces are stylish, authentic, and don’t feel like everyone else is wearing the same thing.
💚 “Buying sustainable means I’m doing enough”
The biggest lesson I’ve learned? Buying less matters most. Choosing fewer, longer, lasting pieces makes a real difference.
Becoming a more conscious consumer is a journey, and for me, sustainable clothing is one step in the right direction.

Frugal Eating Challenge
We’re continuing to eat what we already have at home—and turns out our freezer was packed with tortillas. So voilà… Enchilada Casserole 🙌
If you love enchiladas but get discouraged by all the rolling and assembling, this casserole is your answer. Same flavors, way less work. Instead of filling and rolling tortillas, you just layer everything in a baking dish and let the oven do the rest.
I usually make the filling with beans and whatever veggies I have on hand—always some greens like kale or spinach, and sometimes mushrooms if they’re around. Simple, flexible, and budget-friendly ✨
Enchilada Casserole
Veggie Filling
• 2 Tbsp vegetable broth
• 2–3 Tbsp salsa
• 1 cup yellow onion, minced
• 5 garlic cloves, minced
• ½ cup corn
• 1 cup spinach or kale, chopped
• 1 (15.5 oz) can black or kidney beans, drained & rinsed
• 11 corn tortillas
Creamy “Cheese” Sauce (Dairy-Free)
• 1 cup chopped carrots
• 1 tsp garlic powder
• 1 tsp onion powder
• ¼ cup nutritional yeast
• ½ tsp salt (or more to taste)
• ⅓ cup raw cashews
• 1 cup almond milk
Homemade Enchilada Sauce
• 1 (8 oz) can tomato sauce
• 1 (8 oz) can tomatoes
• 1 tsp chili powder
• 1 tsp cumin
• ½ tsp garlic powder
• ¼ tsp dried oregano
• Salt & pepper to taste
Toppings
• ¼ cup chopped cilantro
• 3 Tbsp green onions
• 1 cup cherry tomatoes, halved
Directions
1️⃣ Cheese Sauce: Boil carrots until soft, drain, then blend all cheese sauce ingredients until smooth and creamy.
2️⃣ Preheat oven to 350°F.
3️⃣ Filling: Sauté onion & garlic in broth for 2–3 min. Add corn & greens, cook 3 more min. Stir in beans and set aside.
4️⃣ Enchilada Sauce: Blend all sauce ingredients (except salt & pepper). Season to taste.
5️⃣ Assemble:
– Spread a thin layer of sauce in a 10×8” dish
– Dip tortillas in sauce and layer on bottom
– Add veggie filling + a few spoonfuls of cheese sauce
– Repeat layers, finishing with tortillas, sauce, and cheese on top
6️⃣ Bake 20–25 minutes, cool 10 minutes.
7️⃣ Top with cilantro, tomatoes & green onions.
