We love to toss autumn vegetables, such as butternut squash, Brussels sprouts, and celery root, with olive oil, salt, rosemary, and pepper and roast them in a 400°F (200°C) oven until tender and caramelized. Then, we mix the roasted veggies with cooked quinoa, cooked lentils or chickpeas, arugula or spinach, and a simple vinaigrette for a filling and flavorful dish.

Fall is when the apples are at their very best, and there are many variations. Our family likes slightly tastier apples, and we eat them as is or add them to dishes.
