Today is day 1 of COVID-19 homeschooling and we started the day by making crackers to have for snack. These crackers are my kids favorite crackers so I try making ever week so we’re always stocked up. 

  • 2 cups white spelt flour or all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp sugar
  • 6 tbsp cold butter ( I used earth balance butter)
  • 2 tsp olive oil
  • 2/3 cup water
  • 3 tbsp  melted butter
  • 1 tsp salt

Preheat oven to 400 F.

Add the flour, baking powder, baking soda, sugar in a food processor and pulse to combine. Add the cold butter in pieces and mix to combined. Add olive oil and then water, little at the time until you have a dough ball. 

Roll out dough as thin as possible with a rolling pin on a flat surface, dusted with flour to avoid sticking. Cut out crackers with a cookie cutter (we used a round one and one heart shaped one). Place crackers on parchment papers on a cookie sheet and bake for 10 minutes. Flip all crackers and bake until slightly golden. 

Remove crackers from oven and brush them with melted butter and sprinkle salt over. Leave until cool. Enjoy!
