Instead of a classic tomato or mushroom sauce, this week I made my plant-based twist on the viral “Marry Me Chicken.” It’s creamy, packed with protein (chickpeas + textured vegetable protein), sun-dried tomatoes, spinach, cashew cream, vegan parmesan, and Italian spices. It’s rich, hearty, and perfect for cozy weeknight dinners.
