Acai Smoothie Bowl

Most morning we eat blueberry oatmeal for breakfast but once in a while I like to change it up and we eat something else. This morning it was acai bowls just because I miss San Diego (where they are very common) and I just found frozen acai (yay). Acai is a superfood and is rich in antioxidants, fiber, and omega fatty acids.

You can buy frozen acai, acai juice and dried acai. In this recipe I’m using frozen acai puree and it makes a wonderful and filling smoothie.

  • 2 packaged frozen acaiAcai bowl
  • 1/3 cup non-dairy milk (I used almond milk)
  • 1 large frozen banana
  • 1 tbsp. chia seeds
  • ½ cup frozen berries of your choice (I used raspberries)
  • 2 fresh dates, pit removed
  • ½ avocado
  • 1 handful leafy greens such as kale, Swiss chard, collard greens or spinach

Suggested topping: granola, goji berries, sliced bananas, fresh berries, chopped nuts, seeds or hemp seeds

Place bowl in freezer to keep it cold and prevent smoothie from melting. Blend everything together in a high-speed blender until creamy but still thick. If it’s too runny, add more fruits and too thick add more milk. Pour into frozen bowl and add topping of your choice. Enjoy!!!
